Croissant Workshop – 14 April
Learn how to fold (laminate) dough with butter to create delicious croissants. The workshop includes recipes and templates, all your ingredients + tools, pastry morning tea, gourmet lunch and your take home croissants.
We will learn how to shape butter blocks, how to handle, rest and work the dough, croissant/danish shaping, prove and bake your pastries.
This is a condensed lesson, I will do some of the preparation for you in advance and supply you with recipes and instructions for that part of the process. This will allow us to do the course within one day.

Sourdough Workshop
Learn the art of Sourdough and bake a traditional White Sourdough Loaf and a Spiced Fruit Loaf around the heart of Pip’s Pastry Bakery, the large marble table.
We will learn how to use your sourdough starter, keep it fed and alive, some convenient tips and short cuts. Sit back and learn the full run down on how to get a delicious sourdough loaf to enjoy regularly at home and then get your hands dirty and make your own.
Alter the recipe to make a fruit loaf or your preferred flavour. We will make the dough, knead by hand, fold, shape, rest, prove and bake one loaf and send one loaf home with you to bake the next day.
The workshop includes a home starter pack:
– Sourdough starter;
– Loaf tin;
– Banneton (proving basket);
– Morning tea;
– Lunch;
– 1 x White Sourdough;
– 1 x Fruit Sourdough.
